TOMATO COCONUT BRAISED CHICKEN
Ingredients:
• 150gm boneless, skinless chicken meat
• 100gm tomatoes, peel skin and crush
• Few sprigs of coriander leaves
• 1 clove garlic, minced
• 1 shallot, minced
• Salt, a pinch
• Pepper, a pinch
• 1 tbsp tomato paste
• 1 cup of plain flour
• 50ml water
• 1 tbsp of cooking oil
• 100ml Kara Coconut Cream
Method:
  1. Cut the chicken meat into 6 equal pieces and season with salt and pepper.
  2. Add flour and coat it evenly on chicken pieces.
  3. Heat 1 tablespoon of oil in a pan and fry coated chicken till golden brown.
  4. Add in crushed tomatoes, tomato paste, Kara Coconut Cream and water.
  5. Bring to the boil and simmer for 5 minutes.
  6. Garnish with sprigs of coriander leaves.
  7. Serve hot with rice or pasta.
