COCONUT SULTANA CAKE
Ingredients:
• 250gm plain flour
• 180gm unsalted butter
• 125gm sugar
• 1 tsp baking powder
• ½ tsp sodium bicarbonate
• 100gm sultana raisin
• 3 eggs
• 100ml Kara Creamed Coconut (paste)
Method:
  1. Add butter and sugar in a bowl, beat till light and fluffy. Add eggs one at a time and beat lightly.
  2. Add Kara Creamed Coconut (paste) slowly and continue beating until batter is smooth and light.
  3. In another bowl, mix flour, baking powder and sodium bicarbonate together.
  4. Add mixed flour slowly to batter while beating slowly and continuously until texture is smooth and consistent. Put in sultana.
  5. Prepare one 4” x 8” baking pan. Lightly grease it with butter.
  6. Pour prepared mixture into baking pan.
  7. Preheat oven to 180ºC (350ºF) and bake for 10 minutes till brown. Cover the cake with aluminum foil and continue to bake for another 40 to 45 minutes.
  8. Remove cake from oven and leave to cool before serving.
