- Add butter and sugar in a bowl, beat till light and fluffy. Add eggs one at a time and beat lightly.
- Add Kara Creamed Coconut (paste) slowly and continue beating until batter is smooth and light.
- In another bowl, mix flour, baking powder and sodium bicarbonate together.
- Add mixed flour slowly to batter while beating slowly and continuously until texture is smooth and consistent. Put in sultana.
- Prepare one 4” x 8” baking pan. Lightly grease it with butter.
- Pour prepared mixture into baking pan.
- Preheat oven to 180ºC (350ºF) and bake for 10 minutes till brown. Cover the cake with aluminum foil and continue to bake for another 40 to 45 minutes.
- Remove cake from oven and leave to cool before serving.
