- Heat 25gm butter in a pan. Add garlic and cooked rice; fry for a few minutes. Toss in salt and pepper.
- Place rice in an oval shaped casserole plate.
- Bring water to the boil in a pot. Put in seafood and cook briefly; remove immediately and place seafood in ice water.
- Continue boiling the stock and stir in mixture of 25gm soften butter and flour; continue boiling until sauce thickens.
- Place seafood on top of rice and pour sauce over it.
- Mix grated cheese, Kara Desiccated Coconut and curry powder; sprinkle over rice and seafood. Bake till brown. Serve hot.
