COCONUT SAMBAL BAKED MACKEREL
Ingredients:
• 160gm fresh mackerel (round cut)
• 1 tbsp of bottled sambal sauce
• 1 tbsp of oil
• Salt, a pinch
• Pepper, a pinch
• 1 tbsp sugar
• 1 piece 6” x 4” banana leaf
• 1 tbsp of Kara Creamed Coconut (paste)
Method:
  1. Heat 1 tablespoon of oil in pan and fry mackerel for 2 minutes on each side till cooked.
  2. Mix sambal sauce with Kara Creamed Coconut (paste) and sugar in a bowl.
  3. Place fried mackerel on banana leaves and spread mixture over mackerel.
  4. Preheat oven to 180°C (350°F) and bake for 3 minutes.
  5. Serve hot with rice or cooked potatoes.
