- Heat 1 tablespoon of oil in pan and fry mackerel for 2 minutes on each side till cooked.
- Mix sambal sauce with Kara Creamed Coconut (paste) and sugar in a bowl.
- Place fried mackerel on banana leaves and spread mixture over mackerel.
- Preheat oven to 180°C (350°F) and bake for 3 minutes.
- Serve hot with rice or cooked potatoes.
