STEWED PORK WITH BAMBOO SHOOT
Ingredients:
• 160gm pork, cut into 2” cubes
• 50gm of sliced bamboo shoot
• 3 shallots, minced
• ½ inch ginger, crushed
• 2 cloves of garlic, crushed
• 1 stalk of fresh basil leaf
• 2 sprigs of Chinese coriander leaves
• 200ml water
• 1 tbsp of oil
• Salt, a pinch
• Pepper, a pinch
• 1 tbsp of chicken stock powder
• 100ml Kara Coconut Cream
• 200ml Kara Creamed Coconut (paste)
Method:
  1. Heat 1 tablespoon of oil in a pot. Add crushed garlic, shallot and ginger; stir fry lightly.
  2. Add pork cubes and continue frying. Add water and stew pork till tender.
  3. Add Kara Coconut Cream, Kara Creamed Coconut (paste), salt, pepper and bamboo shoot into pot. Bring to the boil.
  4. Add basil and coriander leaves.
  5. Serve hot with rice or cooked potatoes.
