GRILLED MUTTON SATAY WITH PEANUT SAUCE

Ingredients:
• 200gm mutton, cut into cubes
• 6 satay stick
• 5gm coriander powder
• 2 pinches sugar
• Dashes tamarind pulp
• 10ml cooking oil
• 1/2 stalk fresh lemongrass, pounded
(or one teaspoon powdered lemongrass)
• 10gm galangal, pounded (or blue ginger)
• 10gm onions, pounded
• 10gm cucumber, cut to desire shape
• 10gm onion, cut into cubes
• 50ml peanut sauce
• 50ml Kara Cream of Coconut (sweetened)

Method:
  1. Marinate mutton with coriander powder, sugar, tamarind pulp, lemongrass, galangal, onions and Kara Cream of Coconut (sweetened); mix well and bring to rest for 30 min.
  2. Place mutton cubes in satay sticks and grill to perfection with cooking oil.
  3. Serve hot with peanut sauce, cucumber and onion.
