CRISPY CHICKEN WITH COCONUT MAYO DIP
Ingredients:
• 200gm boneless chicken leg, cut into cubes
• 1 whole egg, beaten
• 10gm corn flour
• 2 pinches salt
• 2 pinches pepper
• 50gm mayonnaise
• 10gm coriander, finely shredded
• 1 banana leaf (optional)
• 5gm Kara Desiccated Coconut
• 15g Kara Creamed Coconut (paste)
• 50ml Kara Cream of Coconut (sweetened)
Method:
  1. Marinate the chicken with egg, flour, salt, pepper and Kara Creamed Coconut (paste); set to rest for 30 min. Deep fry to golden brown at 180°c (350°F).
  2. Mix Kara Cream of Coconut (sweetened), mayonnaise and shredded coriander.
  3. Place chicken onto banana leaf and garnish with Kara Desiccated Coconut; serve hot with coconut mayo dip.
