COCONUT BREAD & BUTTER PUDDING
Ingredients:
• 50g whipped cream
• 100g milk
• 1½ eggs
• 1 egg yolk
• 30g sugar
• 4pcs white bread (toasted with butter)
• 10g snow powder (available at pastry retail shops)
• 50ml Kara Coconut Cream
Method:
  1. Put Kara Coconut Cream, whipped cream, milk and sugar in a pot and heat up the mixture.
  2. Mix the eggs and egg yolk together in a bowl. Pour half of the cream mixture into the egg mixture; stir well. Pour the mixture back into the balance of cream mixture in pot to re-boil again; strained the mixture.
  3. Cut the white bread into pieces and layer it onto a baking mould.
  4. Pour the pudding mixture into the mould to soak the bread.
  5. Preheat oven to 180°C (350°F) and bake for 30-40mins.
  6. Sprinkle snow powder on top of it (optional); serve hot or cold.
