CHOCOLATE CAKE WITH COCONUT SEMI-FREDDO
Ingredients:
• Fresh Fruits

Chocolate Cake
• 80g eggs
• 60g sugar
• 80g dark chocolate (melted)
• 50g butter (melted)
• 50g flour (sifted)

Coconut Semifreddo
• 100g sugar
• 500g fresh cream
• 4 egg yolks
• 4 egg whites
• 150g Kara Coconut Cream Powder
Method:

Chocolate Cake

  1. Put eggs and sugar in a bowl and whisk it.
  2. Pour dark chocolate and butter into egg mixture and whisk until stiff.
  3. Fold in the sifted flour.
  4. Pour into baking mould; chill in fridge.

Coconut Semifreddo

  1. Place fresh cream and Kara Coconut Cream Powder in a pot and warm the mixture until the powder dissolves; leave to cool.
  2. Put sugar and egg yolks in a bowl and whisk till fluffy.
  3. In a separate bowl, whisk egg whites till stiff and fold it into egg yolk mixture.
  4. In a separate bowl, whisk cream to soft peak and fold it into egg mixture; chill in fridge and use as required.

Assembly

  1. Preheat oven to 180°c (350F) and bake the chocolate cake for 10mins.
  2. Serve with Coconut Semifreddo and garnish with fresh fruits.
