CHOCOLATE BROWNIE WITH COCONUT SAUCE
Ingredients:
• 50g peanut (toasted)

Chocolate Brownie
• 120g butter
• 150g sugar
• 2½ eggs
• 50g flour
• 40g cocoa powder
• 50g walnut (chopped)

Coconut Sauce
• 25g whipped cream
• 150g milk
• 70g sugar
• 50g egg yolk
• 175g Kara Coconut Cream
Method:

Chocolate Brownie

  1. Add butter and sugar in a bowl, beat till light and fluffy. Pour in eggs slowly and beat lightly.
  2. In another bowl, mix flour, cocoa powder and chopped walnut together; add to beaten egg mixture and continue beating until batter is smooth and light.
  3. Pour mixture onto a baking tray and spread evenly.
  4. Preheat oven to 180°c (350F) and bake for 20-30 minutes.

Coconut Sauce

  1. Put Kara Coconut Cream, whipped cream and milk in a pot and bring to the boil.
  2. Add egg yolk in a bowl and whisk it; pour half of the cream mixture into the bowl and continue whisking.
  3. Combine cream & egg mixture into balance of cream mixture in pot.
  4. Cook until sauce thickens. Strain sauce before serving.

Assembly

  1. Place the chocolate brownie on a serving plate and pour the coconut sauce over it. Sprinkle peanuts on top of it; serve hot or cold.
