CURRY BAKED KING PRAWN
Ingredients:
• 3 king prawns
• 1 tbsp fish curry powder
• 1 tbsp of butter
• 1 tbsp of chili paste (optional)
• 3 curry leaves, minced finely
• 1 shallot, minced
• 2 cloves of garlic, minced
• 15gm of ginger, minced
• 1 egg
• Salt, a pinch
• Pepper, a pinch
• 1 tbsp Kara Cream of Coconut (sweetened)
Method:
  1. Using a small knife, make a deep slit down the back of king prawns. De-vein, wash and pat dry.
  2. Season with salt and pepper.
  3. Add garlic, shallot, ginger, curry leaves, butter, egg, fish curry powder and Kara Cream of Coconut (sweetened) in a blender to make curry paste.
  4. Spread paste over back of king prawns and place them on a roasting sheet. Preheat oven to 180ºC (350ºF) and bake for 10 minutes or until cooked.
  5. Serve with rice, potatoes or salad.
